Hand picked mushrooms Val Maira

The winter season at La Marmu pension in Val Maira, Piemonte, Italy starts well before the first snow. Throughout the autumn Ivan Serena collects mushrooms from the local woods - one of the hand-picked ingredients for their nourishing home-cooked traditional meals that will sustain you after a wonderful day of ski touring in Val Maira's hidden snow stashes. Mama Franca Isoardi and Ivan prepare "tagliatelle (always done with spelt flour), "ravioles" (typical potato gnocchi), risotto or with rabbit, quiches or, ...... top .... fried (after being breaded with egg and polenta flour)".
